Strength Salad
/If you love hearty, protein rich salad that will help power you through the day - this is one of my favorites. It’s flavorful, simple, and supplies a nice dose of vegan protein that will keep you feeling satisfied and give you sustained energy.
INGREDIENTS: (For 1 salad)
2 handfulls mixed greens (spinach. lettuces, arugula
1/4 cup cooked lentils
1/4 cup quinoa
sprinkle of feta cheese
1 radish, sliced
half cucumber, sliced
1/2 avocado, sliced or cubed
2-6 kalmata olives, sliced
sprinkle fresh cliantro, torn in pieces
Annie’s Green Goddess dressing to taste
