RECIPE: Brazil Nut Super Food Granola

  • Ingredients:

  • 2 cups oats

  • 1 cup brazil nuts

  • 1 cup pecans

  • 1/2 cup coconut flakes

  • 1/2 cup raisins

  • 1/2 cup pumpkin seeds

  • 1/2 cup ground flaxseeds

  • 2 tbsp chia seeds

  • 1/4 cup coconut oil

  • 1/4 cup maple syrup

  • 1 tsp vanilla extract

  • 2 tsp cinnamon

Preheat your oven to 180 degrees. Start by chopping your brazil nuts and pecans into smaller chunks. To save time you can quickly pulse them in a food processor. Mix in a bowl with all the other other seeds, coconut flakes, raisins and the oats.

Then in a saucepan, combine the coconut oil, maple syrup, vanilla extract and cinnamon. Heat until the coconut oil is melted. Pour into the dry ingredients and mix until everything is well coated. Place the mixture on a lined baking tray and place in the oven to cook for around half an hour.
