Amazing Seared Halibut with Artichoke Sauce

Hi friends!  I made this recipe several months ago and completely forgot about sharing it with you until I prepared it again for Steve last night.  Not because it was unmemorable – quite the opposite – but recipes and photos occasionally get lost in the craziness.

Hello Seared Halibut with Artichoke Sauce!

The sauce is what makes  this fish dish AMAZING!  The recipe is inspired by my cooking mentor, Chef Krisi.

I bought a beautiful piece of Halibut at Whole Foods.  Season the fish with a little salt and pepper.  Sear it on the stove top in a little grapeseed oil over medium high heat.  Flip the fish and put the pan in a 400 degree oven for 6-8 minutes.  DONE.

For Kris’s sauce, you will need:  1 shallot, 3-4 cloves garlic, handful of grape tomatoes, handful of kalamata olives, 1 can artichoke hearts, 1 cup white wine and 1 cup chicken broth or veggie broth, 1 teaspoon dried basil, 1 teaspoon dried thyme.

IMG_1105Saute the shallots and garlic in 1-2 tablespoons of grapeseed oil.   Add artichokes and continue to saute for 3-4 minutes.  Add tomatoes, kalamata olives, wine, chicken broth, and the seasonings.   Simmer the sauce for 10 minutes.  DONE!

I served the fish over a bed of brown rice and steamed bok choy.  Add the sauce and you have a simple and healthy meal!
