Hello Seared Halibut with Artichoke Sauce!
The sauce is what makes this fish dish AMAZING! The recipe is inspired by my cooking mentor, Chef Krisi.
I bought a beautiful piece of Halibut at Whole Foods. Season the fish with a little salt and pepper. Sear it on the stove top in a little grapeseed oil over medium high heat. Flip the fish and put the pan in a 400 degree oven for 6-8 minutes. DONE.
For Kris’s sauce, you will need: 1 shallot, 3-4 cloves garlic, handful of grape tomatoes, handful of kalamata olives, 1 can artichoke hearts, 1 cup white wine and 1 cup chicken broth or veggie broth, 1 teaspoon dried basil, 1 teaspoon dried thyme.

Saute the shallots and garlic in 1-2 tablespoons of grapeseed oil. Add artichokes and continue to saute for 3-4 minutes. Add tomatoes, kalamata olives, wine, chicken broth, and the seasonings. Simmer the sauce for 10 minutes. DONE!
I served the fish over a bed of brown rice and steamed bok choy. Add the sauce and you have a simple and healthy meal!
